Having had a UK registered vehicle impounded once on the continent for not being able to prove we were legally driving the vehicle, I can add that if you are taking a company or a hire car abroad you used to be able to get an official "vehicle on hire" form from the AA as a substitute for a V5 document.

I carry current v5 AND the one the car had before I put my personal plate on it, so I can prove it's not my stolen car. .

I did the Black Forest a couple of years ago (wife's Jeep, seemed appropriate given the history of the area).
In terms of route we wanted to avoid tolls so followed the A25 from Calais past Lille into Belgium, then E42 across southern Belgium.
Until you get past Namur that bit is boring as hell, and full of trucks.
From Namur we headed southwest towards Luxembourg, and as you enter the Ardennes area it started getting better. Hills, forest, fantastic scenery.
We over-nighted somewhere near Saarbrucken then meandered our way cutting the corner across France to Strasbourg where we crossed into Germany, getting to our destination mid afternoon.
The Schwarzwald is superb.
On the way back we were chasing a ferry crossing meaning time was more critical, so we cut across France on the A4/A26. Think it was about £15 or so for tolls, but much faster than the outbound trip as more direct.
You pass through champagne country, and of course pass by World War One sites such as Metz, Verdun, Cambrai, Arras, etc if that floats your boat. Scenically, much nicer than Belgium, the Ardennes bit excepted, until you get close to Calais of course.
