I use Total Video Converter - but you have to buy it at some point

I've found a good video converter - at least I think it's good. It's free and would appear to convert to every imaginable format.
Only trouble - I keep getting error messages because I have no idea in God's earth what to set "Sampling Freq", "Channels", "Frame/Sec", "Bitrate kbps" etc. etc. to... 
If you're in the know - it looks good.
