I guess thats where the difference is, i have done the new Rolex thing on a number of occasions including a Deepsea and a Sea dweller. Both now sold on. They dont have the same appeal to me now as they will never age with all the ceramic bezels and super luminova dials, they all just look the same watch with no individuality and different quirks to them. The only modern Sub i have kept hold of is the kermit 50th Anniversary.
I can see why people purchase new for all the reasons you have said above but for me its all about letting them grow old gracefully now, instead of just another modern Rolex with a couple more scratches on than the identical one next to it. Just my opinion of course 2003 BMW M5- 5 Litres of V8 Optimax Slurping Goodness in Carbon Black
2013 RRS SDV6 HSE Black Edition- Orkney Grey with Ebony & Ivory. LR Facelift RAI, Genuine G4 Expo Rack, 4x Warn Spotlights, Warn 9.5 XPS Winch, Mantec Underbody Protection, Full Easylift Suspension, LightForce HTX 230 Spot Lights, LR Light Guards, 18” Compomotive PD1881 on 265/65/18 BF Goodrich KO2, Brembos Calipers, ARB Fridge, Tuff trek awning.

For me the super luminova dial isn’t as good as the old luminous dials but of course understand why they were discontinued. I have a 1993 bi-metal sub that was super bright when new but now has no glow at all, my 2016 everose yacht-master just doesn’t have the light intensity the old sub used to have. 24MY X-Dynamic HSE Defender 110.
Discovery 4 Marina Black HSE LUX - gone
Northern Lights Violet A45 - my car
E36 Daytona Violet M3 stays under wraps - my toy.

I love the blue hue of the current models luminosity
The new Pepsi GMT is, to me, like buying a newly engineered historical replica car. Eagle Jaguar or original period one? I'm for the former so guess my view on watches follow the theme
Or looked at a different way I can have a new D5 or a well-used-but-well-looked-after-D3 for the same money......... Again I know what I'm going to take (The D5 for the haters out there )
Buckster I have a 'modern' ceramic 'Hulk' Sub' along with black GMT, D-Blue Sea-Dweller (that Rolex have now made the gradient face a 'standard' option for SD's....... ) and an Explorer II; All current models. I also have an old GMT, bashed, with no boxes or papers. I'd sell or swap the SD for a new Pepsi GMT if the chance ever presented itself......
So far I've had a dozen dealers (including one's I am a 'previous customer' of) tell me they are not even taking names to go on a maybe list let alone take a deposit. One dealer said he has 8,000 enquiries so far Other dealers only taking 'local' names and group dealers only allowing one 'interest request' (i.e. can't go to every Goldsmith's and register)
Watch (no pun intended ) prices go sillier at re-sellers and grey-importers than any recent model for the next 2-3 years
