There is one other possibility if everything already mentioned is OK, and that is the radiator cooling fan. If it was engaged constantly this would cause overcooling! You would know this though as it would be constantly roaring at you when accelerating!
In this part of the world you only ever hear it after a cold start, (cycling) or when the AC is in use, or a hot summers day. Where you are I assume the ambient temperatures are generally higher, but at this time of year I'd expect it's activity would be greatly reduced.
The fan is an electronically controlled viscous clutch, and so if there was an issue with it a code should be logged in the ECM.
Worth checking I suppose, if nothing else but to rule it out?yµ (idµ - eAµ) ψ=mψ

Fluctuating temp gauge
I would connect a scantool and check for any obvious faults (if not done already). From memory , I had similar symptom which was caused by faulty engine oil temperature sender (located in engine sump). IID tool indicated faulty sender. Replaced sender and temp gauge was reliable again.

OK, thanks, but don't you wonder that the error is systematic? and nothing erratic? Strong uphill, correct operating temperature, downhill, or even idling, temperature halfway to cold, this pattern is repeated again or again. And by the way, the fan only turns on occasionally like it always has!lost in translation!

I would search for oil temperature
And see what other people’s symptoms were and if they are similar to yours.
And what the satisfactory outcome was

Sounds more like an open or slightly open thermostat because as you go uphill you are burning much more fuel and therefore generating heat, whereas on the level or downhill generating less heat which dissipates through the radiator if water is flowing uninterrupted.
Sorry don't know what year your Discovery is but on EU4 engines there were mini thermostats in the EGR coolers and if they fail you will have similar symptoms.

A 6A chassis Ruben is EU3, the EU4 protocol starts with 7A, so you won't have EGR T/stats. Or at least you shouldn't have if your car is a 6A. So the problem lies elsewhere, such as a faulty thermostat as previously mentioned.
