In terms of a recommendation for a nice shampoo - I'm using Dodo Juice Sour Power at the moment and it's very nice, happy to recommend that one. Also their Born to be Mild. And R222 Bodywork Conditioning Shampoo is also a favourite. All of them are wax / sealant friendly and won't strip it off.
Polish - depends on how old / new / marked the vehicle is. The R222 Gloss Enhancing Paintwork Cleanser is a really good all rounder. If the car has quite a lot of swirls in the paintwork look at the Meguiars Ultimate Compound.

i used zymol on previous car which was black metallic and a right pain to keep looking good but the final coat of wax leaves a superb finish and hides small marks that can`t be removed. pretty expensive and requires some graft though.
there`s one product for washing the car then another for getting the ingrained dirt off which leaves a lovely smooth finish to your paint work, then the wax which is available with different percentages of carnuba etc for different usage and finish. price depends on quantity of carnuba ranging from about £40 up tp thousands!!
you also have to buy sponges, leather and cloths that do not contain silicone.
cost me about £120 to start off with but thats getting all the applicators etc and the wax lasts ages.
a cheaper option is meguires which is more easily available and less time consuming or you could just leave the mud on as previously suggested.

Paintwork has the usual bramble rash finish from off-road excursions [but no orange peel].
That's where the Poorboys Black Hole comes in.
Blends in the rash nicely.
Soon be time to do it all over again.
It normally gets a good going over in the spring to get rid of all the winter cr@p.
